Commentary
I’m the type of person who thinks you have to try really hard to make a Pizza terrible. Obviously I have favorites and dislikes, but in general pizza is just good. Totino’s Frozen Pizza on up to a Chicago Deep Dish Pizza or a giant slice from New York. The typical issue with pizza is that it is calorie rich so anytime you can find hacks or methods to get those calories down, you win. A quick solution to regular pizza is getting thin crust. Even more cutting can be had with cauliflower crust pizza.
For our purposes, we were looking for low calorie, low carbohydrate, and low cook time. We found just that with this simple recipe cooked in the air fryer.
What’s in my kitchen
Recipe
- 1 ea — Mission Carb Balance tortilla
- 1.5 Tbsp — Classico pizza sauce
- 24g — Colby Jack Cheese, shredded
- 8 ea — pepperoni slices
- 1 ea — provolone slice

- Preheat air fryer
- Place tortilla in basket of air fryer
- Spread pizza sauce evenly across the tortilla
- Spread half of Colby jack on top of sauce
- Place pepperoni slices across pizza
- Place provolone slice torn into four pieces across pizza
- Spread remaining Colby jack across pizza and press down gently across whole thing
- Heat at 390-400 degrees for 5 minutes
- Pull out gently and let cool
- Serve
This meal will take six or seven minutes to make, start to finish and yield 340 calories, 22.6g carbohydrates, and 17g of protein.
