Commentary
Yellow potatoes are very tasty when compared to a basic Russet potato. They’re aren’t always as cheap, but it’s hard not to jump on that flavor difference.
For this meal, I picked up a small bag of petite yellow potatoes from Kroger. Why petites? I like them because they’re packaged small and make it very easy to plan meals. You know one small bag will cover ___ many people. PLUS, they’re super easy to explain how to cook. Yellows aren’t as starchy as the Russet, so not as good for mashed potatoes, but are perfect for a basic seasoned roasted potato.
You can use your air fryer or oven for this side dish. For our purposes, we’re going to use the oven.

Recipe
- 1 bag — petite yellow potatoes, halved or quartered
- 0.5 sec spray — Canola cooking spray (or whichever cooking oil you have)
- 2 Tbsp — Tony Chachere’s Creole Seasoning
- 1 Tbsp — Black pepper

- Preheat oven to 375 degree Bake.
- Get a baking dish ready and spray the bottom with a little oil to keep potatoes from sticking to it
- In a bowl, spray potatoes with oil then season with Chacheres and Black pepper then toss to coat evenly
- Place potatoes in baking dish
- Put baking dish in the oven on center rack for 13 minutes
- After time is up, stir the potatoes and set the time for another 10 minutes
- Check for tenderness of potatoes. They should be baked enough to mash slightly with a fork
- Pull them out, serve, and enjoy!
You can portion however you need to, but the preferred portion is about a 1/2 cup of potatoes. If you’re trying avoid sodium, swap out the Chachere’s for Grub Rub for something you find tasty that is lower in sodium.
